The Food Hygiene Rating Scheme (FHRS) is run by the Food Standards Agency in partnership with local authorities in England, Wales, and Northern Ireland. Scotland operates the Food Hygiene Information Scheme (FHIS). Together, they cover every food business in the UK.
How Ratings Work
FHRS (England, Wales, Northern Ireland) uses a 0โ5 numeric scale. Food safety officers assess three areas: hygienic food handling, cleanliness and condition of facilities, and management of food safety. Each area receives a score where lower points mean better compliance. The three scores combine to give the overall rating.
FHIS (Scotland) uses a simpler Pass/Improvement Required system without numeric scores.
What the Ratings Mean
- 5 โ Very Good: High standards of food hygiene
- 4 โ Good: Good food hygiene standards
- 3 โ Generally Satisfactory: Hygiene standards are generally satisfactory
- 2 โ Improvement Necessary: Some improvement is necessary
- 1 โ Major Improvement Necessary: Major improvement is necessary
- 0 โ Urgent Improvement Necessary: Urgent improvement is required
Understanding Scores
FHRS-rated establishments receive penalty points in three categories: Hygiene (food handling), Structural (building condition), and Confidence in Management (food safety systems). These are scored from 0 to 25, where lower scores are better. A score of 0โ5 is excellent, while 20+ indicates serious issues.
